On the matter of healthy eating, let us share with you a very special cake recipe…..which is sugarless, eggless, milkless, butterless, fatless, etc. You would think that the cake will taste weird without the usual ingredients …..but the cake is really exquisite in taste. No kidding you, just ask Hau Kiang and Merlyn. Both have tasted the cake several times and Hau Kiang has made it several times (he has also added brandy to make it more exquisite). Give it a try instead of the usual cake biasa….you will be surprised.
The recipe is extracted from a book called “Cooking the Whole Foods Way” by Christina Pirello, a leukemia patient and modified (by my boss).
Here is the recipe…..18 CARAT GOLD CARROT CAKE
Ingredients A
Bring to a boil and simmer for 5 minutes:-
1 ¼ cups water
1 ¼ cups chopped dates, seeds removed
1 cup raisins
1 teaspoon cinnamon powder
1 teaspoon grated ginger
A pinch of powdered cloves (optional)
A pinch of powdered nutmeg (optional)
Ingredients B
½ cup grated carrots
Ingredients C
½ cup nuts (cashews or walnuts or almonds roughly chopped)
1/3 cup pureed frozen bananas
Ingredients D
Sift together, or whisk with an egg beater:-
2 cups wholemeal wheat flour
2 teaspoons baking powder
1 teaspoon sodium bicarbonate
¼ teaspoon sea salt
Method
1. Add Ingredient B to Ingredient A. Let mixture cool down to room temperature.
2. Stir in Ingredient C
3. Add Ingredient D. Stir to mix the ingredients but not for too long. The mixture will be quite stiff, not of a dropping consistency like a normal cake mixture.
4. Bake in a 9” diameter cake pan in a medium hot oven for 45 mins to 1 hour.
